Apple & Blackberry Jelly

Ingredients

85g packet blackcurrent jelly
1 cup (150g) frozen blackberries
1 medium apple (150g) peeled, cored and chopped finely
1/2 cup (125g) whipping cream
1 tablespoon icing sugar

 

Method

Prepare jelly according to packet instructions.

Divide blackberries and apple among four 3/4- cup(180ml) glasses then pour jelly over the top.  refrigerate about 3 hours or until jelly has set.

Beat cream and icing sugar in small bowl with electric mixer until soft peaks form.  Serve jellies topped with whipped cream.

Preparation time 10 minutes (plus refrigeration time)
