Strawberry Conserve


1.5kg strawberries, hulled
1.1kg white sugar
250ml lemon juice



Gently heat berries in large saucepan, covered, for 5 minutes to extract juice from berries. Transfer berries with slotted spoon to large bowl; reserve.

Add sugar and lemon juice to pan, stir over heat, without boiling, until sugar dissolves; bring to the boil. Boil, uncovered, without stirring, 20 minutes. Add reserved berries to pan; simmer, uncovered, without stirring, 25 minutes or until jam gels when tested.

Pour jam into hot sterilised jars; seal while hot.
